Melon, Prosciutto and Tomato Salad

  • 500g mixed heirloom tomatoes, cut into large chunks
  • 1 Charentais melon, cut into chunks
  • 12 slices of quality prosciutto
  • Mint leaves, shredded
  • Crusty bread to serve
  • For the Dressing
  • 1.5 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tsp runny honey
  • Make the dressing by whisking the ingredients together in a bowl. Set aside.
  • Toss together the melon and tomato chunks with a little of the dressing and some seasoning. Lay the prosciutto over a serving platter and pile the tomatoes and melon on top. Drizzle with more dressing, scatter over the mint leaves and serve immediately with crusty bread.
