Mexican-Inspired Sweet Potato Burgers

  • 900g peeled sweet potatoes, cut into 2.5cm cubes
  • 1 tbsp olive oil
  • 120g cooked and drained long-grain rice
  • 2 tbsp ground almonds
  • Handful of chopped coriander
  • 1 tsp chipotle paste
  • Burger buns, salad leaves and sauces to serve
  • Preheat the oven to 200C. Toss the potato cubes in the olive oil, then spread onto a lined baking tray and roast for 30 mins - you want them softened and golden. When ready, add to a bowl and mash with a fork, then mix in the cooked rice, chopped coriander, chipotle paste and ground almonds. Season and leave to slightly cool.
  • Shape the mixture into 4 evenly-sized burger patties. Place the patties on the baking tray, and cook in the oven for 25 mins. When ready, stuff into buns with your choice of salads and sauces, and serve immediately with a big bowl of nachos.
