Mexican-Style Bean Burgers Recipe
What you'll need:
- 2 x 400g cans of red kidney beans, drained
- 100g breadcrumbs
- Small bunch of coriander, chopped with stalks included
- 1 egg
- 2 tbsp chilli powder
- 200g tub of your favourite salsa
- 150ml natural yoghurt
- Juice of ½ lime
**To serve

- Wholemeal burger buns
- Sliced avocado
- Fresh salad leaves
- Sliced red onion
Time: 15 minutes

Method
First
Pre-heat your grill to a high setting. Tip the tins of beans into a bowl, and properly smash them up with a potato masher or the back of a fork. Add 2 tbsp salsa, the egg, the breadcrumbs, the chilli powder, half the coriander leaves and all the stalks, some salt and pepper, and then mix it all up together.
Second
Divide the mixture into six, then shape them into burger patties with wet hands. Stick them on a baking tray, and grill for 6 minutes on each side or until cooked and crisp.
Third
While you’re waiting for your burgers to turn golden, mix in a bowl the yogurt with the remaining coriander, the lime juice, and plenty of black pepper. Split your buns, top with the yoghurt mix, then go to town with the avocado, onion, salad and any salsa etc you want to add. Serve to your happy amigos, and enjoy!
