  • 20g softened butter
  • 2 tbsp white miso paste
  • 1.5 tsp runny honey
  • 1 lime
  • 1kg whole chicken legs
  • Cooked rice or chips, to serve
  • Preheat the oven to 200C and line a roasting tin with paper. Mix together the miso, butter, honey and the zest and juice of half a lime. Season the chicken legs with salt and pepper, add to the roasting tin and spread liberally with the butter mixture. Cover with foil and roast for 15 mins.
  • Remove the tin from the oven and thoroughly baste the chicken legs with the cooking juices and melted butter. Return to the oven - uncovered, this time - and roast for a further 30 mins, basting once more halfway through the cooking time. Remove from the oven, leave to rest for 10 mins, then serve with chips, rice, salad, or anything else you fancy.
