- 1 tbsp veg oil
- 1 chopped onion
- 3 chopped garlic cloves
- 15g coriander, stalks and leaves separated and chopped
- 1 tsp paprika
- ½ tsp cayenne pepper
- 2 chopped tomatoes
- 2 sliced red capsicums
- 400ml tin of coconut milk
- 4 skinless, boneless white fish fillets
- Rice, to serve
- Fry the onion in the oil for 5 mins to soften, then stir in the garlic, paprika, cayenne pepper and coriander stalks and cook for 5 mins. Add the capsicums and tomatoes and cook for 3 mins more, then add the coconut milk and 300ml water. Bring everything to a simmer.
- Gently lower the fish fillets into the sauce. Cover the pan and poach for 6 mins or until cooked through and flaking, then serve with boiled rice and a scattering of coriander leaves.
