Moroccan Chicken with Apricots
- 1 chopped onion
- 3 crushed garlic cloves
- 275ml chicken stock
- 4 chicken breast fillets
- 400g tin of chopped tomatoes
- 2 tsp cinnamon
- 1 tsp ground ginger
- Handful of chopped dried apricots
- 2 tbsp honey
- Chopped coriander
- Couscous, to serve
- Add the garlic, onion and chicken stock to a saucepan and bring to a simmer. Season well and simmer for 5 mins or until reduced by about half. Add the tomatoes, chicken, spices and apricots, cover with the lid and gently simmer for one hour.
- Just before serving, stir the chopped coriander and the honey into the pot and cook for 5 mins more. Season to taste, then serve with couscous and a dollop of yoghurt - delicious!
