Mozzarella and Capers Pasta Salad
- 150g short pasta, e.g radiatori
- 3 tomatoes, diced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp capers, drained
- 150g mozzarella, torn
- Handful of basil leaves, torn
- 2 tbsp chopped chives
- Cook the pasta in boiling salted water until al dente. Meanwhile, toss the tomatoes, olive oil, vinegar, capers and plenty of seasoning together in a bowl. Drain the pasta and add to the tomato mixture, tossing well to combine. Leave to sit for 5 mins, then add the cheese and herbs and toss once more before serving.
