Mozzarella and Orange Salad



  • 1.5 tsp lightly crushed coriander seeds
  • 1 tsp chilli flakes
  • 3 tbsp olive oil
  • 3 sliced garlic cloves
  • 3 oranges, 1 zested
  • 2 tbsp white wine vinegar
  • 1 tsp runny honey
  • 2 x 250g mozzarella balls
  • 8g each of chopped mint and dill leaves
  • Place the spices in a small bowl. Put the oil and garlic in a small saucepan and heat for 3 mins, until the garlic is golden. Immediately pour over the spices, add the zest of 1 orange and some seasoning, and set aside.
  • Peel and slice the oranges into rounds, and whisk any extra juice from the chopping board into your bowl of dressing, along with the honey and vinegar. Tear the mozzarella and arrange on a serving platter, then top with the orange slices and herbs. Spoon over the dressing, season, and enjoy.
