Mushroom, Miso, and Halloumi Burgers

  • 4 large flat mushrooms
  • 1 red onion, cut into 4 thick slices
  • 250g halloumi, cut into 8 thick slices
  • 2 tomatoes, sliced
  • 4 handfuls of rocket
  • 4 burger buns
  • For the Miso Butter
  • 100g butter
  • 2 tbsp miso (white miso is best here)
  • 2 tbsp soy sauce
  • 1 grated garlic clove
  • Make your miso butter by beating together all of the ingredients in a bowl, and setting aside. Meanwhile, fire up your barbecue. Brush the mushrooms and onion with some miso butter, pop on the grill, and cook for 10 mins, basting and turning from time to time. When softened and nicely charred, move to a warm plate.
  • Cook the halloumi slices on the grill, basting with more of the miso butter until charred. Brush the buns with the butter, toast on the grill, then pile the mushrooms, onion, halloumi, tomatoes, rocket (and some burger sauce, if you fancy it) into the buns and fill your face with a delicious smoky vegetarian treat!
