  • 2 large pre-made pancakes
  • Olive oil
  • 1⁄2 sliced onion
  • 60g smoked bacon, chopped
  • Sprig of thyme
  • 200g mushrooms, sliced
  • For the Blue Cheese Glaze
  • 200g blue cheese
  • 25g butter
  • 2 egg yolks
  • Salt and pepper
  • Preheat the grill. Heat a frying pan, add the oil, onion, bacon, and thyme, and fry for 4 mins. Add the mushrooms and cook for 2 minutes more.
  • Make the cheesy glaze by placing all the ingredients into a food processor, and blitzing until smooth. To serve, lay a pancake flat, and spoon the mushroom mix into the centre. Roll the pancake up, place on a serving dish and repeat. Spoon the cheese glaze over the top, and stick under the grill for a couple of minutes until golden.
