Mushroom Paprikash Jacket Potatoes

Ingredients

  • 1 tbsp olive oil
  • ½ tsp caraway seeds
  • 1 onion, sliced
  • 300g mushrooms, quartered
  • 1 green pepper, cut into chunks
  • 2 tsp smoked paprika
  • 400g tin of chopped tomatoes
  • 1 veg stock cube
  • 4 tbsp soured cream
  • Chopped parsley
  • 2 oven-baked potatoes, to serve
  • Heat a large pan and toast the caraway seeds for a few seconds. Add the oil, tip in the mushrooms, pepper, and onion, and season well. Cook for 8 mins to soften everything nicely.
  • Stir in the paprika, tip in the tomatoes, stock cube and half a tin of water, and cook for 5 mins to thicken. Serve generously on jacket potatoes, and top with soured cream and parsley, if you fancy.
