New York Pastrami Hash

  • 2 tbsp oil
  • 1 chopped red onion
  • 430g white potatoes, cut into 2cm cubes
  • 60g torn pastrami
  • 50g grated emmental
  • Pickles and mustard, to serve
  • Preheat the oven to 200C. Heat the oil in an ovenproof frying pan and fry red onion for 3 mins to soften, then add the potato cubes and fry for 15 mins, or until crisp and golden. Season well.
  • Nestle piles of pastrami into the pan and sprinkle over the emmental. Transfer to the oven and cook for 10 mins, or until the cheese is melted and golden. Serve with pickles and mustard, and enjoy.
