No-Pastry Quiche Lorraine



  • Splash of oil
  • 8 lean bacon rashers, roughly chopped
  • 1 onion, chopped
  • 6 eggs
  • 100g cheddar, grated
  • 2 tbsp chopped tarragon
  • 2 tbsp chopped chives
  • 100g cherry tomatoes, quartered
  • Salt and pepper
  • Green salad, to serve
  • Preheat the oven to 180C. Sprinkle or spray some oil in a large frying pan, then add the onion and bacon and stir-fry for about 10 mins. Whisk the eggs in a bowl, add half the cheese and 1 tbsp of each of the herbs. Stir in half the bacon and onion, and season well.
  • Sprinkle a little more oil in a 20-22cm round oven dish or pie tin, and pour in your egg mixture. Scatter over the remaining cheese and bacon, onion, herbs, and tomatoes, and bake for about 30 mins or until just set and golden. Serve hot or cold with salad - delicious!
