Nordic Mackerel, Potato and Lemon Salad

  • 300g new potatoes, halved
  • 80ml soured cream
  • 4 chopped gherkins plus 1 tbsp liquid from the jar
  • ½ lemon, zest and juice
  • 10g chopped dill
  • 90g sliced radishes
  • ¼ sliced cucumber
  • 1 tbsp olive oil
  • 125g tin of mackerel in olive oil
  • Boil the new potatoes for 15 mins or until tender, then drain and set aside to steam dry. Meanwhile, mix the cream, lemon zest and juice, all the gherkins and half the dill, then season well with black pepper. Add to the potatoes and toss to coat.
  • Add the pickling liquid to a bowl and stir in the radishes, cucumber, oil and the rest of the dill. Season well. Divide the potato salad between plates, top with the pickled cucumber mixture, and tear over the fish. Season with black pepper, serve with lemon wedges and enjoy.
