Old School Prawn Cocktail Recipe
Old School Prawn Cocktail Recipe

What you'll need: * 400g medium prawns (no monster ones here, please!) * 4 small gem lettuces, trimmed * 5 big tbsp quality mayonnaise [https://www.bbcgoodfood.com/user/2945301/recipe/home-made-mayonnaise] * 5 tbsp tomato chutney or ketchup * 2 tsp Worcestershire sauce [https://www.thespruce.com/worcestershire-sauce-ingredients-1808089] * 2 tsp horseradish sauce

What you'll need:

  • 400g medium prawns (no monster ones here, please!)
  • 4 small gem lettuces, trimmed
  • 5 big tbsp quality mayonnaise
  • 5 tbsp tomato chutney or ketchup
  • 2 tsp Worcestershire sauce
  • 2 tsp horseradish sauce
  • Splash of Tabasco
  • Squeeze of lemon juice
  • Paprika for dusting
Time: 25 minutes
Serves: 4

Method

First

Get yourself four glass bowls (you could go full-on seventies and serve them in wine glasses - it’s up to you), and peel all but four of your prawns, and split your gem lettuce into individual leaves. Divide the leaves between the bowls.

Second

Sprinkle your peeled prawns over the lettuce leaves, and season well with black pepper.

Third

Mix together the mayo, tomato chutney or ketchup, Worcestershire, horseradish and Tabasco sauces. Season with the lemon juice to taste, along with some salt and pepper. Spoon the whole lot over the prawns, and then dust the top with paprika. Finish with the remaining whole prawns, and serve with crusty bread. Nice!

This dish is going to pair beautifully with an elegant Cava such as the Vallformosa 'MVSA' Cava NV. You surely can’t go far wrong with this sparkling wine matched with old-school seafood dishes! Delicious!
