Olive, Tomato, and Spicy Sausage Penne
- 1 tbsp olive oil
- 4 spicy sausages, such as chorizo, chopped
- ½ onion, finely sliced
- Pinch of chilli flakes
- 200g can of cherry tomatoes
- Large handful of basil, chopped
- 5 mini mozzarella balls, drained
- 2 tbsp quality mixed olives
- 250g fresh penne, cooked to pack instructions
- Heat up the oil in your pan, and fry the sausage chunks and onion together until golden and cooked. Stir in the chilli flakes to give it an extra kick. Add the tomatoes, the basil, the mozzarella, and the olives, and stir over a low heat for 3 minutes. Add the cooked penne to the pan, mix together, and serve hot. Perfect!
