- 6 fresh oysters in their shell
- 55g butter
- ½ small onion, chopped
- 1 tbsp chopped parsley (fresh)
- 55g spinach, chopped
- 55g fine breadcrumbs
Time: 30 mins
Preheat your grill to its highest setting. While it’s getting hot, open your oyster shells with a shucker or a sharp knife (be careful!). Remove the top half of the shell and discard, and loosen the oyster from the lower shell.
Soften the onion in some melted butter in a pan, and stir through the chopped parsley. Add the spinach until wilted, and then toss in the breadcrumbs and cook for 2 minutes.
Place a heaped teaspoon of the spinach mixture onto of each oyster, season, and then add a small knob of butter on top. Place the dressed oysters in a baking tray, and cook under the grill until golden brown and bubbling.
This recipe will go brilliantly with the dry and powerful Artea Rosé 2017. These two should be a winning combo!
