Ingredients
Method
- ½ thumb-sized piece of ginger, peeled
- 6 tbsp rice wine vinegar
- 1 red chilli, finely chopped
- A few coriander sprigs
- 1 tsp sugar
- 6 oysters, shucked
- Finely grate the ginger and mix with the rice wine vinegar, the chopped red chilli, and some chopped coriander. Stir in the sugar until completely dissolved, and then spoon all over the live oysters right before serving. It’s a real treat!
