Method

  • 1 tsp oil
  • 1 tsp each cumin seeds and ground cumin
  • 1 sliced red onion
  • 1 tbsp mango chutney
  • 1.5 tsp hot chilli powder
  • 50g diced paneer
  • 100g grated cheddar cheese
  • ½ red capsicum, diced
  • 1 crushed garlic clove
  • 10g chopped coriander
  • 2 large plain naans
  • Fry the cumin seeds in the oil for a minute to sizzle, then stir in the onion and cook for 10 mins. Add the chutney, cook gently for 10 mins more, then set aside to slightly cool.
  • Add half the ground cumin, ½ tsp chilli powder and a pinch of salt to a bowl. Stir in the paneer cubes and toss well to coat. Add the cheddar to a separate bowl with the remaining cumin and chilli powder, red capsicum, garlic, coriander and a pinch of salt. Preheat the grill to medium.
  • Place the naans on a baking tray and spread with liberal amounts of the caramelised onion mixture. Top with the cheddar mixture, then finish with the paneer. Grill for 6 mins or until everything is melted and golden, then scatter with coriander leaves and serve - yum!
