Panzanella with Prawns
- 1 yellow and 1 red pepper
- 3 slices of ciabatta
- 15 cherry tomatoes, halved
- 3 spring onions, roughly chopped
- 16 cooked and peeled prawns
- 1 handful of celery leaves
- For the Dressing
- 4 pickled chillies
- 6 tbsp olive oil
- 3 tbsp white wine vinegar
- Make the dressing by chopping the chillies and combining with the vinegar and oil in a small bowl. Season well, and set aside.
- Griddle the whole peppers until nicely charred and blistered all over. Pop into a bowl, cover with film, and leave for 10 mins before scraping off most of the black skin and discarding the seeds and stalks, then chopping. Grill the bread, and tear into pieces, then toss into a salad bowl with the onions, tomatoes, prawns, celery leaves, and peppers. Drizzle liberally with the dressing, and leave to marinate for 15 mins before serving.
