Pasta with Tomato and Halloumi

Ingredients

Method

  • 1⁄2 red onion, finely chopped
  • 2 tbsp olive oil
  • 1 clove of garlic, finely chopped
  • Pinch of chilli flakes
  • 100g halloumi, cut into cubes
  • 2 tomatoes, deseeded and chopped
  • 150g cooked penne pasta
  • 2 tbsp chopped basil
  • Salt and pepper
  • Heat up the olive oil in a pan, and chuck in the onion, garlic, and chilli. Fry for a couple of minutes to soften. Add the halloumi, and fry until golden and slightly crisp. Follow this with the tomato and herbs, and then stir the pasta into the sauce. Serve with plenty of black pepper, and enjoy.
