Peach, Basil and Mozzarella Salad

  • For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard
  • Salt and pepper
  • For the Salad
  • 2 tsp olive oil
  • 4 quartered peaches
  • 200g mozzarella, torn
  • 70g rocket leaves
  • 1 bunch of basil, leaves
  • Whisk together the dressing ingredients in a small bowl and set aside. Lightly grease a griddle pan and griddle the peaches for 2 mins to char, then lay onto a sharing platter. Scatter with chunks of mozzarella, the basil leaves and the rocket, then season and drizzle over the dressing. Perfect!
