Ingredients
Method
- 100g couscous
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 80g baby spinach leaves
- 1 tsp honey
- 60g peppery salad leaves
- 2 pears, quartered and finely sliced
- 50g ricotta
- ½ bunch of chives, chopped
- 1 lemon, zest only
- 4 slices of quality ham, shredded
- Tip the couscous into a bowl and add 150ml of boiling water, then cover and leave for 4 mins. Meanwhile, whisk together the oil, vinegar, mustard and honey in a small bowl and set aside. Fluff the couscous and tip into a salad bowl with the leaves, spinach and pears, and toss together with the dressing.
- Combine the ricotta with 2 tbsp of water, the chives, and the lemon zest. Top the salad with this mixture, then scatter with ham and a good grind of black pepper.
