Ingredients

Method

  • 2 tbsp olive oil
  • ½ onion, finely chopped
  • 3 crushed garlic cloves
  • ¼ tsp dried chilli flakes
  • 100g tomato purée
  • 5 tbsp unflavoured vodka
  • 100ml heavy cream
  • 200g penne, cooked to pack instructions
  • 30g parmesan, grated
  • Basil leaves, to finish
  • Heat the oil in a large frying pan, and gently fry the onion with a pinch of salt for 10 mins. Add the garlic and chilli flakes, fry for a minute more, then stir through the tomato purée and the vodka. Cook for 3 mins, then stir in the cream and remove from the heat.
  • Add about 50ml of the pasta cooking water to your sauce, then tip the pasta and cheese into the frying pan, tossing everything together until well coated and glossy. Season well, and serve with a sprinkling of extra parmesan and some torn basil.
