Perfect Fried Fish
- 2 white fleshed fish fillets (cod or whiting is good)
- 30g plain flour
- 1 lemon, juice only
- Olive oil for frying
- Chopped parsley
- Lemon wedges, to serve
- Scatter some flour over a plate - enough to coat the fish steaks. Dip your fish into the lemon juice, and slather all over the flesh. Dredge through the flour, ensuring both sides get covered.
- Fry the fish in olive oil for about 5 minutes each side. You want them cooked through and firm, but not tough. Serve with crusty bread, a good scattering of parsley, a grind of salt, and some fresh lemon wedges. Perfection!
