Perfect Green Bean Salad

Ingredients

  • 500g trimmed green beans
  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 1 bunch of spring onions, sliced
  • Salt and pepper

Method

  • Boil the beans in salted water for 4 mins, or until just tender. Meanwhile, whisk the mustard and vinegar together in a small bowl, then gradually whisk in the olive oil. Season to taste.
  • Drain the beans well and return to the pan. Toss in the spring onions and the mustard and vinegar dressing, then pile into serving bowls and serve warm. Delicious!
