Perfect Green Bean Salad
- 500g trimmed green beans
- 1 tbsp Dijon mustard
- 1 tbsp white wine vinegar
- 6 tbsp olive oil
- 1 bunch of spring onions, sliced
- Salt and pepper
- Boil the beans in salted water for 4 mins, or until just tender. Meanwhile, whisk the mustard and vinegar together in a small bowl, then gradually whisk in the olive oil. Season to taste.
- Drain the beans well and return to the pan. Toss in the spring onions and the mustard and vinegar dressing, then pile into serving bowls and serve warm. Delicious!
