Plaice with Leek Vinaigrette
- 4 plaice fillets
- 3 tbsp olive oil
- 2 sliced garlic cloves
- 2 shredded leeks
- 1 lemon
- Preheat the grill to high, then lay the plaice fillets - skin-side down - on an oiled baking sheet. Season well, drizzle with 1 tbsp of oil and grill for 3 mins.
- Meanwhile, fry the leeks and garlic in the remaining oil to soften, then squeeze in the juice of a lemon and remove the pan from the heat. Lay the plaice fillets on serving plates, and top the fish with tangles of the garlic and leek mixture. Drizzle with the lemon pan juices, finish with a good grind of black pepper, and serve with new potatoes or chips.
