Pollock Tacos

  • ½ lime, juice only
  • 2 tsp olive oil
  • 20g fajita spice mix
  • 2 x 140g pollock loins, cut into chunks
  • 8 corn tortillas, griddled to serve
  • Guacamole, chopped coriander and salsa, to serve
  • Whisk together the lime juice, fajita spices and oil in a bowl, then add the fish chunks and mix well to coat.
  • Heat a frying pan and fry the pollock chunks for 5 mins, or until cooked through. Divide between the corn tortillas, drizzle with guacamole, salsa and a scattering of coriander, then serve immediately. Delicious!
