Ingredients
Method
- 1 medium cauliflower, cut into bite sized pieces
- 1 egg
- 2 tbsp milk
- 100g fresh breadcrumbs
- 25g parmesan
- 1 tsp garlic powder
- 2 sprigs of thyme, leaves picked
- 1 tsp smoked paprika
- 1⁄2 tsp dried oregano
- Salt and pepper
- Cook the cauliflower in salted boiling water for about 2 minutes, then drain and allow to dry on kitchen paper. Meanwhile preheat the oven to 200C, and whisk together the milk and egg in a bowl. In another bowl, mix the breadcrumbs, garlic, thyme leaves, paprika, oregano, parmesan, and salt and pepper.
- Toss the cauliflower pieces into the egg and milk mixture, and gently stir to cover. Next, toss in the breadcrumb mix. Arrange on a baking tray and bake in the oven for 20 minutes, turning once half-way through the time. Serve hot.
