’Popcorn’ Cauliflower

  • 1 medium cauliflower, cut into bite sized pieces
  • 1 egg
  • 2 tbsp milk
  • 100g fresh breadcrumbs
  • 25g parmesan
  • 1 tsp garlic powder
  • 2 sprigs of thyme, leaves picked
  • 1 tsp smoked paprika
  • 1⁄2 tsp dried oregano
  • Salt and pepper
  • Cook the cauliflower in salted boiling water for about 2 minutes, then drain and allow to dry on kitchen paper. Meanwhile preheat the oven to 200C, and whisk together the milk and egg in a bowl. In another bowl, mix the breadcrumbs, garlic, thyme leaves, paprika, oregano, parmesan, and salt and pepper.
  • Toss the cauliflower pieces into the egg and milk mixture, and gently stir to cover. Next, toss in the breadcrumb mix. Arrange on a baking tray and bake in the oven for 20 minutes, turning once half-way through the time. Serve hot.
