  • 400g kimchi
  • 1 tbsp oil
  • ¼ sliced onion
  • 200g sliced pork belly
  • 1.5 tsp red pepper flakes
  • 1 tsp sugar
  • 150g firm tofu, drained
  • 2 chopped spring onions
  • Drain the kimchi and reserve 100ml of brine. Heat the oil in a large saucepan and fry the drained kimchi, pork belly and onion for 5 mins, then stir in the pepper flakes and sugar, and cook for 3 mins more. Add 800ml water and the reserved brine, then simmer for 15 mins to slightly reduce.
  • Slice the tofu into 4cm squares and scatter them over the stew. Cover the pan with the lid and cook for 5 mins, then serve scattered with spring onions.
