Pork Chops with Smoked Butter and Apple

  • 400g quality pork chops
  • 2 red apples, cored and cut into wedges
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tbsp runny honey
  • 3 rosemary sprigs, leaves chopped
  • 1 tsp balsamic vinegar
  • 25g smoked butter
  • Mashed potatoes, to serve
  • Preheat the grill to medium. Place the chops on a grill pan and season liberally with salt and pepper. Toss the onion, apple wedges, oil, honey, rosemary and some seasoning in a bowl and mix together, then nestle around the pork chops in the grill pan. Cook for 20-25 mins, turning twice until the apples are golden and tender and the pork is cooked through.
  • Drizzle the pork chops with the balsamic vinegar and top with equal amounts of the butter. Return to the grill for 2 mins to melt the butter, then serve with mashed potatoes and the grilled apples and onions. Perfect!
