Pork Island Curry
- 2 tsp peanut oil
- 1 chopped onion
- 2 crushed garlic cloves
- 2 tsp crushed ginger
- 6 tsp curry powder
- 500g sliced pork fillet
- 350ml chicken stock
- 120ml coconut milk
- 1 lime, juice only
- Rice or naan to serve
- Heat the oil in a large frying pan and gently cook the ginger and garlic for 3 mins to soften. Stir in the curry powder, cook for a further minute, then remove everything from the pan and set aside.
- Add the pork to the pan and cook for 10 mins to brown. Stir in the stock, garlic and ginger mix, coconut milk and some seasoning, then bring to a simmer and cook - covered - for about 15 mins. Stir in the lime juice, and serve immediately with rice or naan.
