Pork with Creamy Mushrooms
- 2 tsp oil
- 1 small onion, chopped
- 100g pork medallion, chopped
- 1 crushed garlic clove
- 100g brown mushrooms, chopped
- 100ml chicken stock
- 3 tbsp creme fraiche
- 1 tbsp chopped chives
- Heat the oil in a pan and fry the onion for 3 mins. Toss in the pork and garlic, fry for 1 min, then add the mushrooms and fry for 3 mins more. Pour in the stock, cover and cook for 10 mins, or until the pork is cooked through.
- Remove from the heat and stir through the cream and chives, then season to taste. Serve with courgetti or regular pasta - delicious!
