Potato Salad with Anchovies



  • Leftover roast chicken or turkey (optional)
  • New potatoes
  • 1 can of small anchovies, roughly chopped
  • 1⁄2 clove crushed garlic
  • 1 small red onion, finely sliced
  • Olive oil
  • Lemon juice
  • Small handful of parsley, chopped
  • Mix together the anchovies with the garlic, 1 tbsp olive oil, and a squeeze of lemon. Toss this mixture with the meat and the onion, and leave to macerate while you boil the new potatoes until tender. Slice the potatoes while still warm, and toss with the meat and the parsley leaves. Serve immediately.
