Prawn Tacos with Mango Salsa

  • 500g green prawns, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp garlic powder
  • 8 small corn tortillas, warmed
  • 1 avocado, sliced
  • For the Mango Salsa
  • 1 large ripe mango diced
  • ¼ red onion finely diced
  • 1 red chilli finely sliced,
  • Juice of 1 lime
  • ¼ cup fresh coriander
  • Hot sauce, to serve
  • Make the salsa: combine mango, red onion, chilli, lime juice and coriander. Season with salt and set aside.
  • Toss prawns with olive oil, paprika, cumin and garlic powder. Cook in a hot pan for 2–3 minutes per side until just cooked through.
  • Lay 2–3 prawns in each tortilla, add avocado slices and a generous spoonful of mango salsa. Drizzle with hot sauce and serve immediately.
