Ingredients
Method
- 1 tbsp olive oil
- 1 chopped onion
- 1 chopped celery stalk
- 1 garlic clove
- 300g petit pois
- 200g sliced kale
- 2 chopped potatoes
- 1 chicken stock cube
- 100g cooked prawns
- Heat the oil in a saucepan, then toss in the onion and celery to cook for 5 mins. Add the garlic, cook for 1 min more, then stir in the kale, petit pois, and potatoes, before crumbling in the stock cube and adding 750ml water. Simmer for 12 mins, or until the potatoes are tender.
- Tip ¾ of the mixture into a food processor, and blitz until smooth. Pour the mixture back into the pan, and add the prawns. Divide between bowls, season liberally, and enjoy.
