- 1 tbsp oil
- 1 chopped onion
- 2 tbsp brown sugar
- 2 tbsp curry powder
- 2 tsp smoked paprika
- 2 tsp onion powder
- 2 tsp balsamic vinegar
- 500ml tomato passata
- 100ml fresh apple juice
- 250ml beef stock
- 1 tbsp English mustard
- 2 tbsp Worcestershire sauce
- 2 tbsp ketchup
- ½ tsp bicarbonate of soda
- 4 quality bratwursts
- Chips, to serve
- Cook the onion in the oil with a pinch of salt for 10 mins to soften, then stir in the sugar, paprika, curry powder and onion powder and cook for 4 mins. Add the passata, balsamic vinegar, apple juice and stock, then stir through the mustard, Worcestershire sauce and ketchup. Simmer for 20 mins to reduce, then add the bicarbonate of soda. Season, then blend until smooth.
- Cook the bratwurst sausages according to packet instructions. Thickly slice, arrange on a platter and spoon over generous portions of the sauce. Serve with hot salty chips and dig right in!
