Pulled Chicken Salad
- 1 small roast chicken
- ½ red cabbage, sliced
- 3 grated carrots
- 5 sliced spring onions
- 2 sliced chillies
- Small bunch of chopped coriander
- 2 tbsp roasted peanuts, roughly chopped
- 3.5 tbsp hoisin
- 1.5 tbsp sesame oil
- Combine the hoisin sauce and sesame oil in a small bowl, and set aside.
- Remove all the meat from the chicken, and shred into large chunks. Place in a salad bowl with the cabbage, carrots, chillies, spring onions and half the chopped coriander. Toss together with the hoisin dressing and pile onto plates, topping with a scattering of peanuts and more coriander.
