Ingredients
Method
- 1 tbsp veg oil
- 1 chopped red onion
- 1 tsp of ground cinnamon
- 2 tsp smoked paprika
- 2 tsp Tabasco
- 1 tsp cumin seeds
- 1 tbsp red wine vinegar
- 4 tbsp quality bbq sauce
- 200g can of chopped tomatoes
- 2 x 400g cans of jackfruit in salted water
- Heat up the oil in a frying pan and soften the onion for 10 mins. Add the cumin, paprika, and cinnamon, cook for 3 mins, then add the vinegar, Tabasco, and bbq sauce and mix well. Once combined, add the tomato, drained jackfruit and about 200ml of water. Simmer, covered, for 30 mins, stirring occasionally to break down the fruit, then remove the lid and cook for 10 mins more.
- Once everything is cooked through, shred the jackfruit with a pair of forks. Season, add a bit more bbq sauce if you want it extra sticky, and stuff into buns.
