Quick Asian Beef Salad

  • 300g rump steak
  • 2 tsp olive oil
  • 1 lime, juice only
  • 1 red chilli, sliced
  • 1 tbsp soft brown sugar
  • 85g baby salad leaves
  • 140g beansprouts
  • 150g red grapes, halved
  • Steamed rice (optional)
  • Rub the steak with about 1 tsp of oil, and season liberally. Fry in a smoking hot pan for 2.5 mins on each side (or to your liking), then leave to rest for 5 mins. Meanwhile, make the dressing by mixing the chilli, lime, sugar, and remaining oil in a bowl.
  • Divide your salad leaves, grapes, and beansprouts between 2 bowls, and thinly slice the steak and add the resting juices to the dressing. Drizzle the dressing over the salad, toss in the sliced beef, and serve with rice if you fancy it being a little more substantial.
