Quick Chicken Satay Skewers Recipe

What you'll need:

  • 6 chicken breasts, diced
  • 2 tbsp smooth peanut butter
  • 7 tbsp dark soy sauce
  • 1 tbsp dark brown sugar
  • 2 tbsp curry powder
  • 1 tsp chilli sauce (Tabasco works well)
  • 2 cloves of garlic, chopped
  • 7 tbsp lime or lemon juice

Method

First

First of all, make the marinade for your meat. In a large bowl, mix together the peanut butter, the soy sauce, the chilli sauce, lime/lemon juice, curry powder, garlic and sugar. Toss the chicken in the marinade, cover, and leave alone for at least two hours or overnight in the fridge.

Second

When you’re ready to cook, pre-heat your grill or barbeque to a high heat, and thread your chicken pieces onto skewers. Cook for five minutes on each side, then serve with a fresh green salad, some flatbread, and lime wedges.
