What you'll need:
- 420g pork medallions or pork fillet cut into medallions
- 1 tbsp honey
- 1 tbsp five spice
- 1 tbsp soy sauce
- 1 tbsp cornflour
- 200g frozen peas
- 1 egg, beaten
- 220g cooked rice (white or brown)
- 2 sliced spring onions
Serves: 4
Preparation time: 25 minutes
Method
First
Mix together the soy sauce with the five spice, and rub it all over the pork medallions. Leave them to marinate for ten minutes or so. Take the seasoned medallions, and fry in a very hot non-stick pan for about 3 minutes on each side, or until cooked through.
Second
Once your pork has been cooked, pour 120ml of boiling water into the pan with the pork, along with the honey. Take a little extra water, and mix with the cornflour to make a paste, then add this too - give it all a good stir, and it should become thick and glossy.
Third
In the meantime, make the fried rice - it couldn’t be simpler. Pour the beaten egg with a little salt into a non-stick pan, and make a simple omelette. Cook on both sides, then remove, roll up and cut into fairly small slices. Into the same pan, chuck the cooked rice along with the frozen peas. Cook through until very hot, then stir in the omelette, some soy sauce, and your sliced spring onions. Serve with the pork medallions.
