Quick Feta and Peach Couscous



  • 3 peaches
  • 35g mixed seeds or sunflower seeds
  • 150g feta
  • 100g pack of lemon and garlic couscous
  • Quarter the peaches and remove the stones. Pop them in a roasting tin with the feta and seeds, then drizzle with olive oil and sprinkle with a small pinch of salt. Bake for 15 mins at 200C. Meanwhile, cook the couscous according to package instructions, then toss together with the roasted peaches, feta, and seeds. Season to taste, and serve. Easy!
