Quick Oriental Salad Recipe
What you'll need:
- The juice of a lime
- 1 tsp brown sugar
- 1 fresh chilli, finely chopped and deseeded
- A good splash of Thai fish sauce
- 1 tbsp soy sauce
- 1 crushed garlic clove
- 120g bag of herb salad (green leaf salad will do)
- ⅓ cucumber, halved then sliced
- A small bunch of fresh coriander
- 2 medium fillet steaks
- A handful of roasted peanuts, chopped
- 5 radishes, sliced
Serves: 2
Method
First
In a small bowl, whisk together your garlic, lime juice, brown sugar and chilli. Mix in the fish sauce and soy sauce, and put to one side. Toss the herb salad, the coriander, the cucumber and the radishes, and divide this between two plates.
Second
Trim the fat off the steaks, and pan fry for 4 minutes on each side, or until quite rare, but to your liking. Rest the meat for at least five minutes on a plate, before slicing quite thinly, and laying the sliced meat over the salad. Scatter the chopped peanuts over the salad and meat. Tip the frying juices into the dressing you made earlier, and then pour liberally over the dish.
