Ingredients
Method
- 2 tbsp oil
- 1 chopped red onion
- 1 tbsp cumin seeds
- 2 chopped garlic cloves
- 200g cooked quinoa
- 150g cooked beetroot, grated and liquid reserved
- 50g flour
- 2 tbsp crushed seeds
- ½ bunch of coriander, chopped
- Buns and sauces, to serve
- Preheat the oven to 220C. Put 1 tbsp of oil in a frying pan, and cook the onion, cumin and garlic together for about 6-8 mins. Tip into a bowl, and stir in the quinoa, grated beets, flour, crushed seeds and coriander, then mix to combine and season. Leave to sit for 5 mins, then shape into patties and oven bake for 15 mins. Turn them over, bake for another 10 mins, then pile into buns with your favourite sauce.
