Quinoa and Beet Burgers

  • 2 tbsp oil
  • 1 chopped red onion
  • 1 tbsp cumin seeds
  • 2 chopped garlic cloves
  • 200g cooked quinoa
  • 150g cooked beetroot, grated and liquid reserved
  • 50g flour
  • 2 tbsp crushed seeds
  • ½ bunch of coriander, chopped
  • Buns and sauces, to serve
  • Preheat the oven to 220C. Put 1 tbsp of oil in a frying pan, and cook the onion, cumin and garlic together for about 6-8 mins. Tip into a bowl, and stir in the quinoa, grated beets, flour, crushed seeds and coriander, then mix to combine and season. Leave to sit for 5 mins, then shape into patties and oven bake for 15 mins. Turn them over, bake for another 10 mins, then pile into buns with your favourite sauce.
