Rarebit-Topped Pollock
- 50g grated mature cheddar
- 100g cream cheese
- 2 tbsp fresh white breadcrumbs
- 1 tbsp mustard
- 4 x 175g pollock fillets or similar
- Chips, to serve
- Preheat the oven to 200C. Mash the cheddar, cream cheese, mustard and breadcrumbs to combine. Season the pollock fillets, then top with a dollop of the cheese mix and place the fish on a lined baking tray.
- Place the fish in the oven and bake for 15 mins, or until the topping is golden and the fish is cooked through. Serve with chips and salad - perfect!
