Rarebit-Topped Pollock

  • 50g grated mature cheddar
  • 100g cream cheese
  • 2 tbsp fresh white breadcrumbs
  • 1 tbsp mustard
  • 4 x 175g pollock fillets or similar
  • Chips, to serve
  • Preheat the oven to 200C. Mash the cheddar, cream cheese, mustard and breadcrumbs to combine. Season the pollock fillets, then top with a dollop of the cheese mix and place the fish on a lined baking tray.
  • Place the fish in the oven and bake for 15 mins, or until the topping is golden and the fish is cooked through. Serve with chips and salad - perfect!
