Raw Asparagus and Radish Salad

  • 1 bunch of asparagus
  • 1 bunch of radishes
  • 4 baby zucchini
  • ½ bunch each of mint and dill
  • 1 lemon
  • Olive oil, for drizzling
  • Prepare a bowl of iced water. Peel the radishes, asparagus and zucchini into ribbons, and plunge into iced water. Finely chop the herbs and place in a bowl, before squeezing over the juice of the lemon and drizzling with olive oil. Drain the vegetables in a colander, then place into the bowl with the dressing and toss together. Serve immediately - so simple, so perfect!
