  • 1 tbsp olive oil
  • 1 red bell pepper, deseeded and chopped
  • 400 quality sausages, skin removed
  • 350g tomato and chilli pasta sauce
  • 350g penne
  • Salt and pepper
  • Grated parmesan and torn basil to serve
  • Heat the oil in a frying pan, and fry the bell pepper for a few minutes to soften. Toss in the sausage, and break up with a wooden spoon. Continue frying until browned and cooked through.
  • Cook the pasta in salted boiling water until al dente. Drain, then stir into the sausage mix along with the pasta sauce. Season well, then serve with parmesan and basil.
